So it's clear that they weren't smuggling military weapons to Gaza. It's also clear that they created improvised weapons, which couldn't possibly win a fight but would be deadly enough to provoke a lethal response.

Yes it was staged to force a confrontation and get news coverage, I'm not sure that they exactly went in there going "Alright, now all of us will defiantly give in to the blockade demands except you guys, you guys attack them with deadly improvised weapons and get killed so we can make this story as big as possible."

I'm pretty sure none of them wanted to get killed and they didn't plan on getting killed. More then a few of the peace activist I've ran into "professionally" seem to have this expectation that if they use violence no one will dare use it back.

Still a number of those things are not something you rig up in a few seconds. And none of those things are weapons you use if you expect to actually win against armed troops.
