#1 Recipe: Fix and Forget Veggie Soup

For all our Vegan friends, and those of us who don't want to slave over a good meal for most of the day - I bring a line of Crockpot (Slow Cooker) Recipes.

You can find a decent Crockpot/Slow Cooker at the local Wal-mart/Dollar General/Family Dollar/Fred's Super Value or any such stores. The good thing about this, even ten dollar crockpots will work, as long as they are at least 2.5-4 quarts in size (3 being a good medium).


The Following Recipe is for those of us who may be Vegan, or want a good meatless meal (like those catholics who celebrate Ash Wednesday and Good Friday....you bunch of weirdos).

Fix-and-Forget Vegitable Soup
Prep time - 10 minutes
Cooking Time - 6-8 hours
Serves - 6 - 10 people

{ Ingredients }
1 cup carrots - cut to preference
1 cup green beans
1 cup corn
1cup Lima beans
3 medium potatoes - peeled and sliced to preference
1 qt canned tomatoes (or if you want to do you own, stewed tomatoes)
1 qt Vegetable Stock (use the boxed ones from the Grocery)

NOTE: Make it simple on yourself, but a bag of frozen vegitables from the grocery. You may still have to buy the carrots, but ya know....to hell with it.


{ Hardware Required }
1 spoon
1 Crockpot (3qt size approx)

{ Steps }

Combine everything into a crockpot. Stir it up

Cook on low for 6-8 hours (high for 3-4 hours) or until vegetables are tender.
