Well, something just crossed my mind... What would happen if the replicators from SG: SG1 were released into Borg Space.

Borg get owned as usual. The replicators dismantle any borg who oppose their assimilation process and make more repicators out of the borg. The borg have never demonstrated protection from kinetic attacks (like being torn apart by replicator bugs) and aren't even smart enough to try and stop boarders.

I'm thinking we would see alot of dead borg, followed by Star Trek being eaten by the reps.

In regards to boarding Borg vessels, Voyager ("Dark Frontier") established that intruders only have about two minutes before their presence is determined a threat and they'll respond. Apparently this is a change from their "Q, Who?" and "Best of Both Worlds" behavior.

And out of curiousity, what would make the Replicators immune to Borg assimilation techniques, such as infiltration by nanoprobes? Can Replicators bypass energy shielding which blocks both physical and energy attacks? (I'm refering to Borg ship based shielding, which has been demostrated).

Replicators actually absorb energy fields and use the power for their own purposes. As they are essentially collections of robots, they would seem to be immune to borg nanoprobes. There standard method of operation is to use raw materials to make more replicators, take over the area, build more ships, and expand.
