As far as the origin story, yeah, everyone knows it, but each writer brings their own style to it, which makes things interesting. Batman Begin's origin story was well part of the movie and helped to establish things further in, like Ras Al Ghul and his part in Batman's past.
If it's a reboot, retell the origin story. It establishes the character, the style the writer/director is taking, and the connection we have with the actor as that character. Sever ties with the older superman movies. They're nice, but let them stand on their own, and let the new ones stand on their own.
Let us see Superman as the guy with the weight of the world on his shoulders but always manages to see the brighter side of things. Let's see more of Clark Kent's side of things, why he cares, how he sees the world, and why he's willing to do what he does.
And let's see some awesome badass fights with robots and aliens, mutants and supervillians. I want to see Superman tearing apart some giant robot and pull out the thing controlling it inside with a big old smile as he hands it over to MPD. Enough of saving planes and stopping thugs. How about Lex Luthor making a deal with aliens where he double crosses them for the technology, or they double cross him, or something? I like Lex, he's a good foil, but no more Gene Hackman or scenery chewing, let's see Lex at his best, sneaky, conniving, taking what he wants because he's Lex Luthor. Hell, for a changeup how about having Lex have to work with Superman, because it suits his purposes (see double-cross).
Superman Returns was terrible, and if we can remove it from our memories with a good Superman movie, all the better. Superman Returns was a bad sequel to an old movie that had a lot of issues.
