#1 Recipe: Chicken Noodle Casserole

Prep time - 30 minutes
Cooking Time - 25 minutes
Serves - 4 - 6 people (depending on serving size)

{ Ingredients }
2 - Medium pack of boneless chicken*
1 - 10 3/4oz can mushroom soup
1 - 8oz can young green peas
1 - 16oz package shredded cheese (Chef's Choice)
1 - medium package Egg Noodles (Chef's Choice)
2 1/2oz Extra Virgin Olive Oil (can substitute vegetable oil)

* Note: If utilizing Raw chicken, please take all safety precautions. Raw poultry is capable of transmitting Salmenela poisoning. To assist in avoidance of food poisoning, feel free to make use of the prepackaged, pre-cooked chicken chunks sold in either canned or "vacumm sealed" foil packaging.

{ Hardware Required }
2 - medium sauce pan*
1 - medium sized mixing bowl
1 - Strainer/colander (optional)
1 - 12"x6" casserole pan (alt. deep "dish" baking pan)
1 - heat resistant spatula / cooking spoon

*May not require if utilizing pre-packaged chicken chunks.

{ Steps }

*If using raw chicken
Remove chicken from package.

Heat two tablespoons of E.V.O.O. in medium sauce pan, brown/"pot fry" chicken till cooked, seasoning to taste.

*If using pre-prepared chicken
Open chicken, drain. Season lightly

Place chicken in mixing bowl, set aside

Set noodles to boil. Add salt and half ounce of extra virgin olive oil for flavour and reduce "stickiness" of noodles.


In sauce pan, pour in Mushroom Soup, heat till liquid over medium fire - stirring constantly.

Open small green peas, drain can, pour into Mushroom Soup. Stir.

Pour mushroom soup and pea mixture into bowl with chicken, stire until well mixed.

Add egg noodles to chicken/mushroom soup mixture, stir until well mixed.

Preheat oven to 350°F.

Pour mixture into greased baking/casserole dish/pan. Cover liberally with grated cheese, and place into oven at 350° for 20 minutes.

Remove from oven, let cool for five minutes.

Serve.

Alternatively - you can substitute Light Chunk Tuna (or albacore if that's your preference) to make this a Tuna Noodle Casserole. Don't forget to season to taste in either case.
